Description: Alfalfa is one of the oldest cultivated plants in the world, not only for livestock, but also for human consumption. It is an herbaceous legume that is grown in almost every state in the US, but thought to have originated in what is now Iran. It can survive extreme temperatures and conditions. It will become dormant, like in times of extreme drought, and then resume growth when conditions improve.
Culinary Uses: Alfalfa sprouts are very tasty, with a sweet, nut-like flavor, and the seed sprouts are used as a salad ingredient. To make sprouts, place two tablespoons of Alfalfa Seeds in a sprouting jar with three times as much water as seeds. Soak overnight. Rinse seeds and drain twice daily, store in low humidity without direct sunlight. About the fourth day place rinsed sprout jar in indirect sunlight. To make a tea, crush 1 tablespoon of dried Alfalfa Seeds, and add to 2 cups of boiling water, reduce the temperature and simmer gently for 5 to 10 minutes, and quickly strain the tea.
